Grilled Salmon Rotini Salad

  • 1  pkg Rossi Pasta Rotini Trio
  • 1 1/2  cup  cucumber, sliced and quartered
  • 1  cup  grape tomatoes, cut lengthwise
  • 1/2  cup  chopped bell pepper
  • 1/2  cup  diced red onion
  • 1/3  cup  lemon juice
  • 1/3  cup  olive oil
  • 1  garlic clove, minced
  • 1  tablespoon  chopped fresh dill
  • 1  tablespoon  Dijon mustard
  • 1/8  teaspoon  black pepper
  • 1/4  teaspoon  salt
  • 1  tablespoon  brown sugar

  •   Grilling Mixture Ingredients
  •   *********************************
  • 1  tablespoon  soy sauce
  • 1  tablespoon  olive oil
  • 1/2  tablespoon  brown sugar
  • 1/8  teaspoon  black pepper
  • 1  lb  fresh salmon filets

Salmon Directions

Combine all grilling mixture ingredients (except salmon) in a jar, cover and shake well. Pour over salmon fillets in shallow dish and let it absorb for a few minutes. Grill the filets on medium high heat skin side down for 4-5 minutes. Brush any remaining grilling mixture on filets. Turn over and grill and additional 3-4 minutes. Allow filets to cool before removing skin. Cut salmon into chunks and set aside.

Dish Assembly

Cook pasta according to package directions, drain and set aside. Combine olive oil, lemon juice, garlic, dill, Dijon mustard, salt, pepper and brown sugar in a small bowl. In a large bowl, toss the pasta, salmon chunks, cucumber, tomatoes, bell pepper and onion. Pour the dressing mixture over the pasta mix, toss well and serve.
