Southwestern Chipotle Fettuccini Salad

  • 1 Pkg  Rossi Pasta Southwestern Chipotle Fettuccini, cooked
  • 2  ounce  oven roasted corn
  • 2  ounce  black beans
  • 1  jalapeno pepper, diced
  • 1  zucchini, grilled and diced
  • 1  large tomato, quartered
  • 2  cup  Ranch dressing
  •   fried tortilla chips (garnish)
  •   salt & pepper to taste
Add pasta and vegetables to mixing bowl. Toss with ranch dressing. Garnish with fried tortilla strips. Serve chilled. *For fun, add a little of your favorite salsa to the recipe above.
