Classic Pasta Salad

  • 1 Pkg  Your choice of Rossi Pasta
  • 1-2  tomatoes, diced
  • 2-3  scallions, diced
  • 1/4  cup  fresh shredded Parmesan cheese
  • 1/4  cup  fresh shredded Romano cheese
  • 1/4  slice of lime (to squeeze)
  • 1/4  cup  extra virgin olive oil
Cook pasta according to package directions. Rinse thoroughly with cold water until pasta is cooled. Drizzle 1 tablespoon of oil on cooled pasta to keep it from sticking together. Add tomatoes and scallions to cooled pasta. Squeeze lime juice over mixture and then add remaining olive oil as dressing. Allow to chill for a couple hours before enjoying your quick delicious pasta dish. For color, dice 2-3 bell peppers, using red, yellow and green.
