Summer Salad with Garlic

  • 1 Pkg  Rossi Pasta, your choice
  • 1-2  cloves of garlic
  • 3  tablespoon  olive oil
  • 2   fresh tomatoes chunked or chopped fine. (Reserve juice)
  • 2  tops of scallions, thinly sliced
  • 1  tablespoon  freshly grated parmesan or other hard cheese (romano, etc)
  •   salt & pepper to taste
Cook pasta in salted boiling water until al dente. Quickly drain pasta and immediately rinse with cold water until cooled (to stop the cooking process). Saute' garlic in olive oil until golden then remove with a slotted spoon when done or it may burn. Reserve the oil and allow cooling. Gently toss pasta with all ingredients. Add extra-virgin olive oil as necessary for texture of salad. Salt & Pepper to taste.
