Shiitake Fettuccini with Pan-seared Asian Salmon & Spinach

  • 2  ounce  butter
  • 1/4  teaspoon  crushed red pepper
  • 2  tablespoon  garlic, chopped
  • 2  ounce  brown sugar
  • 2  ounce  lime juice
  • 2  ounce  soy sauce
  • 1  teaspoon  corn starch
  • 2  ounce  orange juice
  •   salt & pepper to taste
  • 1  Pkg of Rossi Pasta Shiitake Fettuccini
  • 4  each  salmon filets, approx 4 oz. each
  • 1  tablespoon  sesame oil
  • 1  quart  spinach leaves, stems removed, cleaned
  • 1/2  cup  cilantro
  • 1  tablespoon  sesame seeds
Preheat oven to 400 degrees. In a small sauce pan combine first 8 ingredients. Bring to simmer to thicken. Remove from heat. Season salmon well on both sides with salt & pepper. Heat large oven-proof skillet till hot. Sear salmon in sesame oil. Flip salmon, pour prepared sauce over and place skillet in oven. Cook for approx 4-6 minutes till medium done. Meanwhile cook pasta according to package directions. Stir the spinach into the pasta pot during the last minute of cooking. Strain spinach and pasta together. Top pasta with salmon. Garnish with fresh cilantro & sesame seeds.
