Spinach Basil Garlic Fettuccini with Zucchini

  • 1  Pkg Rossi Pasta Spinach Basil Garlic Fettuccini
  •   fresh Parmesan cheese
  • 2-3  tablespoon  extra virgin olive oil
  •   salt and pepper to taste
  • 1  medium zucchini
  • 4  plum tomatoes (seeded)
  •   fresh/dried parsley
  • 2  garlic cloves, minced
In a skillet, saute' 2 minced garlic cloves in 2-3 tablespoons of extra-virgin olive oil. Add one medium zucchini julienned. Season with salt & pepper. Cover and cook over medium heat for 2 to 3 minutes. Add 4 seeded and roughly chopped plum tomatoes. Replace lid and cook until zucchini has softened (about 2-3 mintues). Add one 12oz package of Rossi Pasta Spinach Basil Garlic Fettuccini (prepared according to package directions). Drain and toss together. Finish with chopped parsley and fresh Parmesan cheese.
