Chicken Florentine Lasagna


Ingredients:
  • 1   Pkg Classic or Spinach Basil Garlic Lasagna
  • 3  cup  Ricotta cheese
  • 1/2   cup  Parmesan cheese, grated (plus 2 tsp for topping)
  • 2  eggs
  • 1  teaspoon  garlic, minced
  • 2  cup  cooked spinach, chopped
  • 1/4  teaspoon  cayenne pepper
  • 1 1/2  lb  chicken, cubed
  • 2  cup  fresh tomatoes, chopped
  • 1/2  cup  green onion, chopped
  • 1  lb  Smoked Gouda cheese
  • 1 1/2  cup  Half and Half
  • 3/4  cup  water
  •   salt and pepper to taste
Directions:
Preheat oven to 375*

Combine Parmesan cheese, eggs, garlic, spinach, cayenne pepper and salt and pepper. Lightly oil a 9x13x2 pan and pour in 1/2 cup of half and half. Layer ingredients in the following order: 3 noodles, 1/3 Ricotta mixture, 1/2 tomatoes, 1/2 onions, 1/4 gouda, 3 noodles, 1/3 Ricotta, chicken, 1/4 gouda, 3 noddles, 1/3 Ricotta, 1/2 tomatoes, 1/2 onions, 1/4 Gouda. Top with 3 noodles. Pour 1 cup of half and half over noodles. Pour 3/4 cup water in corner of pan. Cover with lightly oiled foil and bake 60 minutes. Uncover and top with remaining Gouda and 2 tsp Parmesan. Bake 10 mintues longer.
