4 Quick Linguini Recipes
Quick Recipe #1 - Toss cooked pasta with a few tablespoons of chutney and top with unsweetened coconut.
Quick Recipe #2 - Saute' 1 tsp chopped garlic, 1/4 cup chopped onion and a few handfuls of frozen peas (defrosted) in a few tbsp of olive oil (or use some fresh snow peas) and toss with cooked pasta.
Quick Recipe #3 - Saute' 1/4 cup chopped onion, 1/4 cup chopped celery, 1/2 tart apple sliced and 1/4 cup raisins in a few tbsp of olive oil. Add 1/3 - 1/2 cup dry sherry and simmer. Toss with cooked pasta (add some plain yogurt for a creamy variation) and top with toasted pine nuts or peanuts.
Quick Recipe #4 - Saute' 1/4 cup chopped onion, 2 tsp chopped garlic, 1 inch long strips of red and yellow bell pepper (heaping 1/2 cup) in a few tbsp of olive oil. Add 1 medium fresh tomato peeled, seeded, and chopped and 1/2 tsp curry powder. Simmer. Add 1/3 cup heavy cream.
