Summer Salad with Garlic

  • 1  Pkg Your Choice Rossi Pasta Linguini
  • 1-2  cloves fresh garlic
  • 2   fresh tomatoes chunked or chopped, reserve juice
  • 2  tops of scallions, thinly sliced
  • 2  tablespoon  freshly grated parmesan or other hard cheese (romano, etc)
  •   sliced black olives
  •   extra-virgin olive oil
  •   salt & pepper to taste
Cook pasta according to package directions and immediately rinse with cool water until cooled (to stop the cooking process).

Thinly slice garlic and sautee until golden in 3 Tbsp olive oil. Remove garlic from oil with slotted spoon when done or it may burn. Reserve the oil and allow cooling.

Gently toss the pasta with all ingredients. Add extra oil as necessary for texture of salad.
