Tex-Mex Salad


Ingredients:
  • 1 Pkg  Rossi Pasta Fire! (The Devil's Angel Hair)
  • 1 can  kidney beans, drained and rinsed well
  • 2  tomatoes, seeded and chopped
  • 1  bunch scallions, sliced (use white and green parts)
  • 1  large green bell pepper, seeded & chopped
  • 1 can  whole kernel corn, drained
  • 1/4  cup  chopped fresh cilantro
  •   Jalapeno peppers to taste, chopped
  • Dressing  Ingredients:
  • 1/2  cup  olive oil
  • 1/4  cup  red wine vinegar
  • 2  teaspoon  chili powder
  • 1  teaspoon  cumin
  • 1  garlic glove
  • 1  dash  cayenne pepper
Directions:
Cook pasta according to package directions. Drain and rinse with cold water until pasta is thoroughly cooled. Mix pasta and vegetables and dressing. Let marinate 1 hour. Serve with garnish of sour cream and chopped avocado.
