| Rossi Pasta is as versatile a pasta as you'll find, excellent both MADE-TO-ORDER and PRE-PREPPED, and easily incorporated into your kitchen's cooking regimen. |

| TO STORE: |
Keep in a cool, dry place at around 50-70 degrees, and preferably out of the kitchen. Our pasta's 'BEST BEFORE' date is stamped on each package and/or indicated on the outside of its shipping container |

| TO COOK: |
Use 4-5 quarts of water per pound (the more water, the better!). Salt water just before adding pasta. Stir occasionally while cooking, and always taste- check for doneness. |

| MADE TO ORDER INSTRUCTIONS: |
Strain pasta with a colander/spider just as it's reaching al dente. DO NOT RINSE. Toss with olive oil, add sauce and/or topping, and serve promptly.

| PRE-PREPPING INSTRUCTIONS: |
Bring pasta to a doneness about 30 seconds to 1 minute below al dente. Shock pasta in ice water, then toss with olive oil, shake off excess water, and refrigerate in a shallow plastic container. To reheat: Add back to boiling water for about 30 seconds, or until pasta reaches al dente .

| FINISHING IN A SKILLET OR WOK: |
Whether made to order or pre-prepped, Rossi Pasta can be "finished" by tossing with sauce and/or other ingredients in a cooking skillet or wok just before serving time. It is especially important to intentionally undercook the pasta in boiling water when employing this finishing technique.
