Southwestern "Caprese" Chipotle Fettuccini

  • 1 Pkg  Rossi Pasta Southwestern Chipotle Fettuccini
  • 1/4  cup  cilantro
  • 1/2  cup  vegetable oil
  • 1  cup  corn kernels
  • 2  cup  tomatoes, 1/2 inch dice (heirloom varieties if possible)
  • 1  cup  fresh mozzarella, 1/2 inch cubes or balls
  • 1  each  lime, cut into 8 wedges
  •   salt & pepper to taste
In blender, puree cilantro and oil with pinch of salt. Roast corn in 450 degree oven for 8-12 minutes till turning golden. In bowl, toss tomatoes, mozzarella, corn and cilantro oil. Season with salt and pepper. Allow to marinate for 20 minutes. Cook pasta according to package directions. Serve tomato mixture on top of pasta. Garnish with lime wedges.
