Pan-roasted Duck Breast on Chipotle Fettuccini

  • 1 Pkg  Rossi Pasta Southwestern Chipotle Fettuccini
  • 4  each  duck breast pieces, 4-6oz each
  • 1  tablespoon  olive oil
  • 2  ounce  real maple syrup
  • 1/4  cup  lime juice
  • 3/4  cup  heavy cream
  • 1/4  cup  cilantro, chopped
  •   kosher salt
Season duck breast with salt & pepper. Heat large oven proof saute' pan until hot. Sear duck breasts (skin side down) in olive oil until caramelized & golden. Flip breasts, drizzle with maple syrup and put pan into 400 degree oven for approximately 6-10 minutes. Remove pan from oven, remove duck from pan and allow to rest (5 minutes) before slicing. Place the pan over medium heat and deglaze with lime juice. Add cream and simmer till reduced to thin sauce consisitency. Taste for salt. Cook pasta according to package directions. Top with sliced duck breat and lime cream. Garnish with cilantro.
