Parmesan braised Broccoli & Leeks with Shiitake Fettuccini

  • 1  Pkg of Rossi Pasta Shiitake Fettuccini
  • 6  ounce  Parmigiano Reggiano Rind
  • 1  quart  water
  • 1  teaspoon  salt
  • 1/2  teaspoon  pepper
  • 2  cup  leeks, cleaned & sliced into 1 1/2 inch lengths
  • 2  cup  broccoli, chopped into 1 inch pieces
  • 1  each  lemon
  • 3  tablespoon  pine nuts
Place parmesan, salt, pepper and water in stockpot. Bring to simmer for 1 hour. You should be left with about 2 cups of stock. If not, add more water or reduce before moving onto the next step. Add leeks and simmer for 10 minutes. Add broccoli, cover with lid and cook for 3 mintues. Meanwhile, cook pasta according to package directions. Remove any remaining parmesan rind from stockpot. Serve broccoli, leek mixture over pasta. Garnish with pine nuts & lemon wedges.
