Simple Spinach Pasta

  • 1  Pkg Rossi Pasta Spinach Basil Garlic Fettuccini
  • 3  tablespoon  extra virgin olive oil
  • 1/2  medium onion, minced
  • 4  cloves garlic, minced
  • 1 1/2  tablespoon  balsamic vinegar
  • 1  cup  heavy cream
  • 1/2  cup  chicken stock
  • 1  lb  fresh cleaned and patted dry spinach
  • 1/2  teaspoon  hot pepper flakes
  • 1/4  lb  Pecorino Romano, grated
  •   salt, pepper and lemon wedges to taste
Saute' the onion and garlic in the olive oil for a few minutes. Add chicken stock and vinegar and bring back to a boil. Add the spinach and saute' for a short couple of minutes. Cook pasta according to package directions. Add the cream, hot pepper and half of the Romano. Bring back to boil. Remove from heat. Salt and pepper to taste. Serve with pasta, balance of cheese and lemon wedges. Variation: Saute' in some shrimp or calamari.
