Quick Shrimp & Pasta Salad

  • 1 Pkg  Rossi Pasta Capelli d'Angelo
  • 2  large fresh tomatoes, chopped (optional)
  • 1  cup  artichoke hearts, chopped
  • 1  bunch scallions, chopped (optional)
  • 2  tablespoon  fresh basil or cilantro, chopped
  • 1  lb  40-60 count shrimp, cooked
  • 1/4  cup  extra virgin olive oil
  • 1/4  cup  tamari or soy sauce to taste
  • 3   tablespoon  wine or balsamic vinegar to taste
  • 3  tablespoon  lime juice to taste
While cooking pasta according to pasta directions, prepare other ingredients and blend liquids together in a 2-cup container. Rinse cooked pasta well under cold water and shake off excess vigorously. Incorporate all ingredients together and chill as desired. Makes 8 large cups. Variations: fresh spinach, pimento. green peas, scallops, hot pepper, olives...enjoy! Note: the seasoning of food is very subjective; we think "to taste" makes great sense.
