Devil's Rain Pasta Salad

  • 4  ounce  Rossi Pasta Fire! (The Devil's Angel Hair)
  • 2  cup  Bibb lettuce
  • 2  medium ripe tomatoes
  • 1/2  cup  giardiniera
  • 2  tablespoon  capers, drained
  • 1/4  cup  kalamata olives, pitted and halved
  •   Add one of the following:
  •   2 grilled chicken breasts or
  •   1/2 lb. grilled fish
  •   grated parmesan
  • Dressing  Ingredients
  • 2  tablespoon  white wine vinegar
  • 6  tablespoon  extra virgin olive oil
  •   salt and pepper to taste
Preparation: 1. While water comes to a boil to cook the pasta, combine all ingredients except the pasta and dressing. 2. Combine the dressing ingredients in a small jar, seasoning to taste. 3. Cook the pasta according to package directions. Drain well. Pour the hot and well-drained pasta over the salad ingredients. Pour the dressing over everything and mix well. Top with the optional ingredients. Serve immediately
