Caprese Zucchini Linguini

  • 1  pkg Rossi Pasta Zucchini Linguini
  • 1/4  cup  cilantro
  • 1/2  cup  vegetable oil
  • 1  cup  corn kernels
  • 2  cup  tomatoes, 1/2 inch dice
  • 1  cup  fresh mozzarella, 1/2 inch cubes or balls
  • 1  lime, cut into 8 wedges
  •   salt & pepper to taste
In a blender, puree cilantro and oil with pinch of salt.

Roast corn in 450 degree oven for 8-12 minutes until golden.

In a bowl, toss tomatoes, mozzarella, corn and cilantro oil. Season with salt and pepper. Marinate for 20 minutes.

Cook pasta according to package directions.

Serve tomato mixutre on top of pasta.

Garnish with lime wedges.
